John Yoo: Good News and Bad News
The good news? John has just agreed to guest-host the Ricochet podcast this week, sitting in for Rob. (Rob will be back in April. He swears.)The bad news? John revealed in an email exchange just now–don’t ask how the subject came up–that, priding himself on the cuisine, if that is the word, of his hometown of Philadelphia, he insists, insists, on putting Cheez Wiz on steak sandwiches.

Well Mr. Yoo does love the McRib, so we should not be surprised. I personally say real cheese steak is provolone or nothing! But everyone knows that cheese stake is poor man’s Italian beef. Dripping with meat juice and loaded with hot and sweet peppers, it is the only beef sandwich worth having.

Coincidentally Cheez Wiz was mentioned in some of those enhanced interrogation legal debates in the Bush years.

Obviously, you fail to understand the great American tradition of synthetic a priori food (actually you leave out the a priori part and just manufacture the stuff synthetically). Nature is highly overrated thus wholly unnatural food has always found a place in the glorious junk food American cornucopia. I rest my case (it’s a good thing too because I have a severe stomach ache).

I was with you on the Cheez Wiz but I must protest the vilification of Velveeta.
One cannot make queso dip without that magic melting mystery brick of . . . whatever is actually in that box, which makes Velveeta (and RoTel) staple items, as far as I’m concerned.
Velveeta is to cheese as Tang is to orange juice.

This issue goes back centuries in Philly and is a little known corollary to the debate over the Constitution and Bill of Rights. Some enlightened but fringe historians contend that the enumerated powers and First Amendment had their genesis in the preference of Madison and others for Cheese Whiz, and their concern that such views would be stifled by a ruler/central government staffed by “health nuts.” The Whiz/Velveeta debate is rumored to be reflected in missing portions of the Federalist Papers (known as the “pasteurized process” articles). Hamilton was a Velveeta man.
Look, the harshing on American Cheese really is uncalled for. But if you must have a source, I give you “In Defense of American Cheese.“
I am sick and tired of Ricochet’s contributors being so biased against Cheez-Whiz. Every time I sign on here, the front page is littered with posts that just don’t get it. You elitists may have more cheddar than the rest of us, but we will make American great again.
Spot on. And it’s not just here. When was the last time you saw Bill Kristol or Jonah Goldberg eating Cheese Wiz? Hey people, seeing The Wiz years ago doesn’t count!

John may well take Cheez Whiz as a second, if not third variety of cheese or cheesefood on his steak sandwich.
RoTel? Well that’s what you’re doing wrong, right there. You don’t have to follow the recipe that’s on the box. Get some tomatoes and green chilies and chop ’em up yourself. Add some frioles negros, a little wine, some more chilies, a little more wine, some onions, some wine … whoops. We’re a little low on wine.
The Velveeta is key, though.

Try to make this clear to Peter just how vital Velveeta is. Why with your recipe invoked a microwave could ignite like a nitro-methane funny-car doing the quarter mile. Even the land speed record might be breached. Food technology is of the utmost importance.

However, you of all people should appreciate Cheez Wiz on a cheese steak.
Yes, Cheez Wiz is disgusting (as are all things Philadelphia-related), but it is the traditional topping.
I was impaired one night in college and hanging out with my girlfriend at some campus eatery. We bought a bottle of spray cheese and a stack of crackers. The top broke and it was a continual flow of cheese. We kept spreading the crackers and eating as fast as it came out. If you were there it was funny.

I’d feed my dog pretty much anything. The question is whether it would eat it, and by extension whether or not I should.
