John Yoo: Good News and Bad News
The good news? John has just agreed to guest-host the Ricochet podcast this week, sitting in for Rob. (Rob will be back in April. He swears.)The bad news? John revealed in an email exchange just now–don’t ask how the subject came up–that, priding himself on the cuisine, if that is the word, of his hometown of Philadelphia, he insists, insists, on putting Cheez Wiz on steak sandwiches.

Where I live, we don’t have cheese steaks. We have steak sandwiches and the default topping is red sauce.
As a South Jersey boy who grew up in the 60’s and have eaten my share of steak sandwiches from long before high school, I’ve lived long enough to remember when going to Cheez Wiz was a change (sometime in the early or mid 70’s). At least it was different than many other places around the city and suburbs around Camden NJ (I should know, because I used to make steak sandwiches in my summer job between my Sophomore and Junior years at college). Maybe it’s been around long to be considered traditional by a lot of people, but I remember reacting to the point of ordering the only steak sandwich I had at Pat’s (it might have been Geno’s across the street) without any cheese. Yes, they can be eaten without cheese. It’s the first change I would recommend that would improve the sandwich, before I would add anything (fried onions I would consider a traditional topping).
Red sauce as in ketchup, or as in some kind of hot sauce?
I’m trying to understand the rationale behind Jersey Mike’s chain for intentionally excluding ketchup as a condiment from their stores. Personally I think ketchup is good on steak sandwiches and I’d rather have them that way than with cheese.

No. Red sauce means marinara. Ketchup on a steak sandwich is an infamnia.
Hey, right! My brother loves pizza steaks, only this would be without cheese. Pizza steaks are fairly popular in south Jersey.
I know it’s an unpopular opinion, but the Philly cheesesteak sandwich is way overrated. I’ve not eaten one that was any good. They just lack flavor. Mass and slop don’t make up for that. But I’ve never been to Philly, so the homers will simply insist that the one that the guy on the sidewalk makes in their city is just sooo much better than anywhere else in the United States. So there, I said it! ;)
So, these “steak sandwiches” of which you speak. Are they on a long roll, similar to a Philly, or a bun?

Negative. I’m from Oklahoma. There aren’t any communists here, except for a few imported faculty at OU. It’s just that we much prefer our steaks and barbecue.

I will wait for the FBI and Congressional investigations to determine the truth of your alleged OK’ness and why someone who enjoys steaks and BBQ cannot also enjoy Philly cheese steaks.

Having grown up in Tulsa, I can second all of this. (Though my FB feed makes me wonder sometimes if the commie count’s a bit higher now than I remember.)
