    I am also a Colleen B. Very funny. And a fellow Catholic.

    The sweet potatoes taste good, that’s why I put them in.

    The matzo meal is for the liquid. I don’t usually have to squeeze it out, although the bottom of the bowl is always kind of liquidy.

    I will inform my husband.  He’s out tonight but maybe we can have latkes at least one of these 8 nights.  I did a vegan apple cake (for a grandson) so I may do that to celebrate since I have the ingredients  – and its Hanukkah.

    Never have I ever, run into a single other person who knows about that CD . . .  But (not to veer too far off-topic,) if you’re not playing the Tuvan throat singer version of Jingle Bells, you’re not getting the full effect . . . .

    I just came from the community Hannukiah Lighting service at the Flagstaff City Hall that our African-American Christian Mayor insisted upon after Pittsburgh.  

    Many lovely songs were sung, and the Rabbi explained the role of the Dreidel.  Young children clustered to spin the Dreidel and eat its candy.

    Very sweet.

    Probably some people near me do. He’s playing three shows at a venue near me the weekend after next… tickets are $58-$64 a pop.

    @colleenb, the Book of Esther (for Catholic Christians) also has portions in Greek, just fyi. :-)

    Now about this apple cake …

    This is a great recipe:

    1 1/2 C salad oil (I usually use canola)
    2 C sugar
    2 eggs

    Electric mixer until well blended.

    3 C flour
    1 tsp baking soda
    1/2 tsp salt
    1 tsp cinnamon

    Sift these together and add to the first mixture.

    3-4 C apples cut into chunks
    1 C nuts if you like them (I don’t)
    1 tsp vanilla

    Fold apples into flour and oil mix.

    Bake 50-60 minutes at 350 in 9×13 baking pan. So good. So easy.

    It really is (both good and easy).  I did add walnuts, which I like.  Next time, though, I might try some ground almonds.  Flavor without the crunch.  We’ll see.  I especially like that the crust is a bit crunchy and crumbly.  Delicious.  Thanks!
