Yes, this is just what the market was like! You caught its ambiance well, very evocative! It strikes me as I read this that that market was a “wet” market, as are most Thai open markets, though I never heard the term before this present crisis.

Thanks, Susan. When our house helper made the papaya salad, she would always make two versions: the Thai version that was milder, with peanuts and shrimps, and the Lao version that was more hot and sour. We kids preferred it made the Lao way.
When I came to the States, I bit in to Chinese egg rolls thinking I had found the crispy spring rolls again. I was so disappointed. There is nothing like Vietnamese spring rolls.

You should re-enter those fresh meat markets as an adult. I did, the same one, on our visit last November. Let’s just say, my tolerance for smells has dropped.
