As I noted in today’s podcast, turkey’s overrated, stuffing blows hot and cold (or dry and damp, actually) and Starbucks has made pumpkin passé. The mandatory, must-have side dish for every Thanksgiving dinner?

Sweet potatoes! And the best way to eat sweet potatoes is the amazing “Sweet Potato Praline Casserole” from chef Alex Patout of New Iberia, LA.

Warning: Bring this dish to the family Thanksgiving or Christmas gathering, and you better be prepared to do it again next year. And the next, and the next….

Sweet Potato Praline Casserole

Ingredients:

  • 5 large sweet potatoes or yams
  • 1/3 cup milk
  • 1/2 cup (1/4 pound) softened butter
  • 1/2 cup heavy cream
  • 1/2 cup sugar
  • 1 cup light brown sugar
  • 2 eggs beaten
  • 1/3 cup melted butter
  • 1 teaspoon vanilla
  • 1 cup chopped pecans

Instructions: 

  1. Preheat oven to 350 degrees F.
  2. Scrub the sweet potatoes or yams well and place them in the oven.
  3. Bake until tender, about 40 minutes, and remove. When they are cool enough to handle, halve them and scoop out the insides into a large mixing bowl. Mash well. You should have about 3 cups.
  4. Mix the softened butter into the mashed yams or sweet potatoes along with the sugar, eggs, vanilla, and milk. Pour the mixture into a baking pan or casserole dish.
  5. Bring the cream to a simmer in a small saucepan. Add the brown sugar and stir until it dissolves.
  6. Cook the mixture over medium heat until it reaches the soft-ball stage on a candy thermometer.
  7. Remove from heat and beat in the butter and the chopped pecans. Pour this mixture over the yams. Bake until very hot and beginning to brown.

    This sounds like gilding the lily on steroids. Pardon the mixed metaphor. Sweet potatoes are just wonderfully delicious baked. Thoroughly baked until the ends start to caramelize. Full stop.

    Fat, sugar, more fat, more sugar. Sounds like dessert. I’m sure what you are describing is quite delicious, but lilies are quite lovely and smell sweet without adding gold leaf. So, too, a well roasted/baked sweet potato. And eating it that way leaves more room (calories!) for pie. Which is kind of what you’ve described. Just pop it into a crust and there it is: sweet potato pie. A dessert, not a pretend side dish. I’ll not ruin your planned meal–enjoy it in good health. And a very happy Thanksgiving to you and all. Whatever else is going on, we have a great deal for which to be thankful.

    PS: I did copy the recipe and might well do as I said: pop it into a home-made single pie crust and call it dessert. Sounds yummy.
