I took a pass on the Bull Frog Breakfast: Three eggs, grits, hash browns or home fries, and biscuit or toast, and choice of bacon or sausage. Living on the edge? Then go for Richard's Breakfast (pronounced Reeshard's), which substitutes Richards sausage as the meat of choice. Wonderful stuff, but I just wasn't that hungry after a gallon or so of gumbo the night before.

I was in Denver one time on business, and when the day ended I hit a restaurant for supper. When the waiter came by to take my order I ask him for a recommendation, as I hadn't ever eaten in the place before. He asked me if I liked hot, meaning spicy, food. I said I did. He replied, "Well have the jambalaya. It's the best thing on the menu and the cheapest, too." I've been in love with Cajun cooking ever since.

I know what you mean about accents coming back. After a few days back in my home hills of East Tennessee, I hear my own accent sneaking back. It just sounds natural.
Your story about the man making rosaries and your love for the good people who know basic truths calls to mind the "hillbillies" I grew up with.
BTW Some of the original Arcadians that were run out of Canada ended up in the lower Appalachians (E. Tn and W. NC). Think we might be related?

I'm reading a book now on the Grand De'rangement, when the Acadians were dispersed from Nova Scotia and scattered all over the place. I wouldn't be surprised at all if some of them wound up in the Appalachians.

My children swear that my accent changes as soon as I cross the Alabama state line to visit relatives. I would scoff at the notion except I always knew who my dad was talking to on the phone by his accent and cadence.
