There are two answers: 1) it's thematic fashion, 2) depending on the state, there are some game (waterfowl, turkeys) and some hunting arrangements (tree stands) that don't require blaze orange, so you can use the same gear.

To help break up your silhouette. Deer are color-blind, so the orange vest doesn't hurt your chances that much -- they're not likely to recognize a vest-shaped object as a threat as long as they don't make out the outline of a bipedal animal wearing it.
Other game (turkey, for instance) are NOT color-blind, hence the need for natural-colored cammo.
Plus, it looks cool (if you're into that sort of thing).
