The Greatest Super Bowl Snack of All Time
Here's what I will be eating during the Super Bowl. Take a big block of Velveeta cheese. Cut into small cubes and place in a large bowl. Add two cans of Rotel diced tomatoes. Microwave on high for about 5 minutes, stirring occasionally. Serve with tortilla chips or, even better, Fritos Scoops.
As documentary film maker Nick Rogers discovered recently, cheese dip was invented in my home town, Hot Springs, Arkansas. This weekend, grocery stores across central Arkansas will have special displays containing stacks of Velveeta and Rotel.
Like me, Bill Clinton, spent most of his boyhood in Hot Springs. While on politics, he and I disagree on just about everything, I'm sure he'll agree with me on this: Velveeta-Rotel cheese dip is one of the greatest foods of all time.

I think I'll concede your point. Related, I should probably inform readers that you probably won't be able to find Velveeta in the cheese section. It does not need to be refrigerated. So it's usually in a different section. An argument can be made that it's better than cheese!

Mr. Groseclose, your assertion that Velveeta could arguably be better than cheese is offensive and disrespectful. Sir Velveeta is gelatinous vegetable oil...it is barely an organic compound (ie. almost not food).
That said the best dip for your nachos is something called Mexican casserole. I can't do it justice in such a small space...but it is essentially ground beef seasoned with Taco Seasoning, chipotles, green chilies, cumin, coriander, and more chilly powder. It is then mixed with one can of tomato sauce, refried beans, black beans, kidney beans, and pinto beans. It is then covered with cheese and baked. It comes out molten lava hot and you can eat it with your favorite tortilla chips.
I can give an exact recipe if people want...but it is awesome!

If you want to know how Mexican restaurants make that delicious creamy white queso dip, it's nothing more than white American cheese and heavy cream, which can be found in any grocery store. Far superior to cheese in a box. Just throw it into a pot and melt it, add chili or salsa or jalapenos or whatever you want.

...but in Texas "queso" means two different things. Yes, it just means "cheese" if you're speaking spanish. But if you use it in an english sentence, it's shorthand for "chile con queso" -- that is, cheese with some spicy stuff mixed in -- usually a can of Ro-Tel.
English speakers who say "queso" are never just talking about a block of cheese. They're talking about the prepared, spicy cheese dip. · 10 hours ago

My Mom makes the Velveeta/Rotel dip all the time. It's great as is, or with whatever extras you care to add. However, Tim, you are wrong about Fritos's Scoops. Whatever they did to Fritos to make them bend that way makes them taste awful. Although they are getting harder to find, get some of the King Size Fritos and do a side by side taste test.Scoops have ruined more than a few snack chip brands.....

I have never been so proud to have been born in Arkansas. My wife and I honeymooned in Hot Springs and I don't recall seeing a cheese-dip museum. If there's not one there, Velveeta needs to start one. In fact, cheese-dip should be a prominant part of the town---you could stay at the Arlington, and order cheese-dip with the spicy Rotel for room service. There could be a melted Velveeta "spring" in the lobby. Why doesn't this exist?

My only problem with the Velveeta/Ro-tel combo is my ultra-liberal brother-in-law who always has to tell me (like it is new and interesting news) that Bill Clinton loves this dip. After the third time, you would think he would remember that he had already told me about it. Seriously, I shudder every time I think of what to prepare for parties when he will be there and I have chosen to skip the Queso just to avoid getting to discuss President Clinton's favorite things. Too many cigar images flash in my head at that topic.
