So, What About the Leftovers?
We all must have some favorite ways to turn the dismal looking leftovers of the feast into memories for posterity if not a quick snack. In my wife's French Canadian family the most audacious attempt was turkey aspic, affectionately known as turkey jello by my kids. Diced turkey was added with onions and celery to turkey broth and then converted into a congealed salad with Knox gelatin and served over a piece of lettuce with a slab of mayonaise on top. Can we all say Yum-Yum? I actually improved on this (I know that is hard to believe) by adding a can of stewed tomatoes and basil and then adding parmesan cheese to the mayonaise. What are your leftover traditions?

I do turkey enchiladas and tamales. My kids are happy with the mountains of mashed potatoes.
