Well said. I'm one of the few people I know who hates fondant on cakes. Give me buttercream or give me death! I was in a Michael's craft store the other day, when I noticed Duff has come out with his own fondant. Ugh. A nice alternative to the over-produced cake is the website <a href="http://www.cakewrecks.com/">Cake Wrecks</a>. It is hilarious!

Long ago--back in college--I owned the best cookbook ever written, the Australian Women's Weekly Guide to Italian Cooking. I can't remember how it came into my possession or how, tragically, it slipped out of it again. Every recipe in it was not only a winner but simple and failproof. There was a recipe in there for an Italian ricotta cake, soaked in rum, with whipped cream, candied fruit and slivered chocolate, and it was the best cake I have ever, ever tasted. I would do anything to find that recipe again, but that edition has long since gone out of print. If anyone knows where to find a copy--I don't remember what year it was, but it must have been early 90s, and obviously you'd know it was the right one because it had that cake recipe--let me know. How much more popular I would have been over the years if I had been able to bring that cake to dinner parties.

Not too long ago I was lucky(?) enough to have a cake from one of these fancy cake places. I'll refrain from mentioning which one, but I will say after the flight cross country -- the cake had a seat all to itself -- we found the limit of fondants protective qualities.

fish around online like ebay & amazon.com, then when you're pretty sure you have close to the exact title and author, better yet an ISBN, get your local library to locate it on interlibrary loan. When it comes in, make copies of the recipes you want.
